I love these two words together, and this salad!
- ½ cup green onions, chopped
- 1 cup Italian flat leaf parsley, chopped
- ½ cup fresh lemon juice
- 2 cups Simple Truth organic quinoa, cooked and cooled
- ½ teaspoon white pepper
- 2 tablespoons fresh basil, minced
- 2 tablespoons fresh mint, chopped
- ½ teaspoon salt
- ¼ cup Simple Truth organic olive oil
- 1 clove garlic, minced
- Prepare quinoa as directed on package; cool.
- Toss together all ingredients. Chill for 1 hour or more to allow flavors to blend.
